A successful career
Gabriel Marlot was only 24 when he took over the Cygne de
la Croix in 1976.
At first he was on his own. His retired father helped him out for
a few years.
He was as much concerned with renovating the premises as surrounding
himself with quality staff, to whom he passed on his love of the profession,
teaching them the expertise acquired from working with several
star chefs.
Before setting up in Nogent-sur-Seine, after leaving the Ecole Hoteliere
in Romilly-sur-Seine in 1969, our chef earned his stripes working
in a number of exclusive establishments.
After a few years in the ranks, he became first chef’s
assistant in a restaurant called Le President, one of the best around
the Rungis food market. It was there that he learned to appreciate
freshness in all food products.
He then joined the prestigious Plaza Athenée brigade, the luxury
Avenue Montaigne hotel in Paris, where he discovered the permanent
demand for quality.
