First-rate staff
On top of Cygne de la Croix’s permanent and
efficient staff of ten, the caterers can call on up to twenty extra
part-time staff if necessary.
Some of the staff including, in the kitchen section, Thierry Boulanger and, in the Service/Reception area, Stéphane De Bona were trained on the job by Gabriel Marlot himself, who attaches importance to passing on his
knowledge then letting his pupils express themselves.
Everyone works in this spirit, with the sole aim of giving their
customers complete satisfaction. As Gabriel Marlot often says, «For
functions, it’s the restaurant that comes to you.».
In other words, there’s no difference. So it’s not unusual
to see people who first discovered the catering service
by chance becoming regular customers of the rue des Ponts restaurant
in Nogent.
Even if it means travelling some considerable distance…
